Caprese salad with chicken and avocado, healthy recipe in five minutes

The traditional caprese salad – tomato, basil and mozzarella – is a delicious side dish that can serve as a base to prepare a complete salad to serve as a unique dish and solve a lunch or dinner with little effort and without dirtying pots.
Ingredients
Green sprouts of lettuce, spinach, lamb’s lettuce, 100 g Chicken breast fillet, 1 cherry tomatoes, 10 fresh mozzarella, 30 g Avocado, 1 small Basil, 8 leaves Extra virgin olive oil, 1 tablespoon White balsamic vinegar, 1 tablespoon Salt and freshly ground pepper
Step 1
Salt and pepper the chicken fillet and grill it over medium high heat, just enough to brown on both sides, but do not overdo it so that the meat does not dry out. Set aside and let it rest for a couple of minutes before cutting it to settle the juices inside.
Step 2
In a large bowl put the green sprouts in the bottom and on top the cherry tomatoes cut in halves, the avocado peeled, pitted and cut into two halves and the chicken fillet cut into strips.
Step 3
Salt and pepper to taste and season with the oil, vinegar and basil leaves.
Step 4
Serve immediately with the chicken still warm.
Note
If you prefer a vegan option, you can substitute the chicken fillet with a smoked or marinated and grilled tofu fillet.
