The sliced bread torrijas, wrongly called bimbo bread torrijas, because the brand of bread you use will not matter, are a quick and easy solution to indulge yourself with a torrijas without complicating your life. In fact you can do it the fast way, that is, using the milk as it comes out of the carton or you can do it a little more and infuse it before with some aromatics that can be from the typical cinnamon stick or lemon or orange peel, to the more exotic such as cardamom seeds or tonka bean.
Ingredients
Sliced bread, 6 slices Sugar, 2 tablespoons and a little more for sprinkling Eggs, 2 Milk or vegetable drink, 1 glass Butter, for greasing Optional : Maple syrup or agave syrup, fruit, cinnamon, powdered sugar, crème de cacao, dulce de leche, chopped fresh fruit, nuts….
How to bake torrijas in the oven
Do not think that because they are baked in the oven they will be less caloric than if they are pan-fried, because this type of torrijas are better when they are cooked on the griddle than if they are fried in oil. Even so, the recipe for baked shortbread French toast has the advantage that we can make many at once, which comes in handy when it comes to breakfast with the family.
Step 1
Turn on the oven with the broiler at 200ºC to preheat it. Remove the tray, grease it with butter and set aside.
Step 2
Mix the milk (see endnotes) with the sugar and eggs, dip the bread slices in the mixture and leave them for a couple of seconds, which will be enough to soak in the mixture.
With the help of a spatula we pass them to the tray that we have greased and sprinkle with a little more sugar.
Step 3
We place the tray with the shortbread torrijas in the highest position of the oven to cook with the grill for about 10 minutes or until we see that they are golden brown, we remove the tray, turn the torrijas, sprinkle again with sugar and put it back in to cook on the other side until golden brown.
Remove from the oven and sprinkle with sugar and cinnamon.

As I mentioned in a previous paragraph, frying is not a good choice for this type of torrijas made with a bread as delicate as sliced bread. They are much better if they are grilled as if they were French toast as I tell you below.
Step 1
Grease a frying pan or griddle with a pinch of butter and heat it over medium-high heat.
Step 2
Mix the milk (see endnotes) with the sugar and eggs, dip the bread slices in the mixture and leave them for a couple of seconds, which will be enough to soak in the mixture.
Step 3
With the help of a spatula we pass them to the pan or griddle in which we are going to cook them and toast them for about 3 minutes on each side until golden brown, at that time we can sprinkle them with a little sugar or cinnamon powder or sprinkle them with maple syrup or agave syrup or homemade syrup.
Notes
As I mentioned at the beginning, whether they are baked in the oven or grilled in a we can make them with the milk as is or adding a few drops of some essence such as lemon or vanilla, or we can take it with a little more patience and previously infuse the milk with a vanilla pod opened lengthwise, or with a cinnamon stick, or orange or lemon peel by heating it without boiling, letting it cool and straining it before mixing with the egg.
