Strawberry tiramisu, the dessert to forget about sponge cake

The sweet and creamy touch of the mascarpone cream is undoubtedly key to this strawberry tiramisu, a fruity dessert where strawberries charge with the creaminess of the mascarpone cheese. The sponge cake is dipped in the syrup of the stewed strawberry itself, transferring all its flavor to this juicy and sweetstrawberry tiramisu that can be made with any other seasonal fruit.
Ingredients
Strawberries or strawberries, 300 g Sugar, 1 tablespoon Muscatel or Marsala wine, 150 ml Ground black pepper, c/s Eggs, 2 Mascarpone, 120 g Salt, a pinch Sugar, 40 g Soletilla sponge cake or Torta de Alcázar, 60 g
Step 1
Chop the strawberries and place the pieces in a saucepan with the sugar and wine. Bring to the boil, lower the heat and stew for 3 minutes adding optionally a little ground black pepper. Strain, keeping the broth in a container suitable for dipping the biscuits.
Step 2
Whip one of the egg whites (the other one can be frozen for use in another preparation) until stiff with a pinch of salt, using a whisk until it froths well but without overdoing it. The ideal is to have the egg at room temperature so that it whips well. This egg white will give fluffiness to our strawberry tiramisu.
Step 3
Whip the two egg yolks with the sugar in the same way until they whiten well and almost double in size, with the electric whisk it will always be easier. Once they are well whipped, add the mascarpone cheese and mix with enveloping movements until everything is well integrated. Integrating the ingredients with wrapping movements is necessary to keep the maximum amount of air possible in the mixture and so that it is very juicy.
Step 4
Add the whipped egg white until stiff and fold it in as well. Set aside in the refrigerator to take a little body for 30 minutes.
Step 5
Mount our strawberry tiramisu dipping the sponge cake in the syrup and putting a base of it. On top place some stewed strawberries and finish with the mascarpone cream. You can make two layers and optionally you can finish on top with a few natural strawberries or also with pure cocoa powder.
