During the past confinement in Spain there were many who abandoned the frenetic pace of work and life, and began to enjoy the time and the little things. During those weeks we would catch up with pending series, with that book that was beginning to gather dust on the bedside table and, in most cases, we would strive to learn to execute with amazing mastery that recipe we had always wanted to learn to make.
At that time, the kitchen became the best stay for many who put on the apron and started cooking as if there was no tomorrow. Instagram feeds encouraged us to make traditional dishes and some more modern ones, but what everyone tried (and made) were breads. Flours, sugars and yeasts disappeared from the supermarket shelves as if it were post-war.
Look, there are recipes for easy-to-make breads, but we were given to sourdoughs, village breads and a thousand more recipes for those of us who had never made bread before. Without a doubt, we threw the blanket over our heads and did not remember those quick and easy bread recipes. How? An easy bread recipe? You bet. There are, they are very tasty and I’m not talking about cheese breads or crunchy snacks. For example, it is the case of Chinese flatbread or pita bread, an easy recipe for those who have never made bread.
It is said that pita bread is one of the oldest breads there is; made in ancient Egypt, along with wine or beer. This kind of flatbread traveled around the Mediterranean, leaving influences in Greece and North Africa, before settling definitively in the Middle East. This is where this hollow bread became popular, on purpose, to be filled with the ingredients of your choice. In this region, there is no meal that is not accompanied by pita bread. And no wonder, because it is very good and extremely easy to make. Of course, it is a perfect bread for stuffing meatballs, stews or any number of possibilities. I can even think of making a classic mixed sandwich or even a chicken salad in the style of Queen Elizabeth’s coronation chicken. Or go straight for a potato omelet, isn’t the omelet sandwich a delight?
How to make easy pita bread
Ingredients
. Strong flour, 400 g Dry baker’s yeast, 6 g Water, 250 ml Salt, 8 g
Step 1
In a large bowl, mix the dry ingredients: flour, yeast and salt. When they are well integrated, add the water and mix everything well. Before kneading, let it rest for 10 minutes.
Step 2
After this time, knead vigorously with your hands until the dough is homogeneous and smooth. In the same bowl, add a pinch of oil and return the dough. Cover and let it ferment for 1 hour.
Step 3
After the time, flour the surface on which we are going to work. We separate balls of about 50 – 70 grams and, with the help of a rolling pin or with your hands, knead them until they acquire a diameter of about 20 centimeters and a thickness of approximately 2 millimeters. That is to say, thin, but not too much. We reserve all our discs and let them rest for 5 minutes.
Step 4
They can be made in the oven or in a frying pan. In the first case, preheat the oven to 200 ºC and introduce them on a little greaseproof paper so they do not stick. When we see that they swell and begin to brown, they are ready. In the second case, it is enough to put a frying pan on high heat without oil. Add the disk of dough, cover and leave it in a few seconds and it will be ready.
