Ingredients
For the rice pudding
SOS Special Dessert Rice, 150 g Fresh whole milk, 1 ¼ liter Cinnamon, 1 stick Skin of ½ lemon White sugar, 1 ½ liter White sugar, 1 ½ literfrac12; lemon White sugar, 150 g Salt, ½ teaspoon
For the rice pudding ice cream
Rice pudding, 500 g Honey, 3 tablespoons Egg yolks, 3 pcs Liquid cream 35 % m. g., 300 g Lemon juice, a few drops Cinnamon powder

In today’s recipe, we propose to go a step further, to unite in one recipe two of the desserts that we all love the most, on the one hand, rice pudding, which has long ceased to be a typical sweet dish of Easter to become a dessert that we would like to eat every day and, on the other hand, ice cream, the dessert that has always made us wish that the summers do not end. With both of them we have prepared this rice pudding ice cream, a simple dessert for which you will walk out on your shoulders through the front door.
How to make rice pudding ice cream
Only a few simple ingredients are needed to prepare this delicious rice pudding ice cream. The recipe requires planning as we have to prepare the rice pudding and let it cool before we can continue with the preparation of the ice cream.
Step 1
To prepare our rice pudding ice cream the first thing we have to do is to make a rice pudding in the traditional way. To do this, in a saucepan we put to cook the milk, with salt, cinnamon stick and lemon peel.
Step 2
Add the rice in the form of rain and let it cook over medium heat for about 40-45 minutes approximately stirring without stopping. As the rice is going to be the base of our ice cream, we need the rice to be very creamy.
Step 3
When the rice is ready, add the sugar, stir well with a wooden spoon or silicone spoon to dissolve the sugar, remove from heat, pour into a large bowl and let cool.
Step 4
Once the rice pudding is at room temperature, separate 500 g and blend it with a blender or food processor until you have a smooth and fine cream. Set aside in the refrigerator until completely cold.
Step 5
Whip the egg yolks with a stick blender until frothy. Add the cream with the honey and continue beating to whip the mixture until it forms stiff peaks when the whisk is lifted.
Step 6
Incorporate the cream mixture to the rice pudding cream, with wrapping movements so that we do not lose the air that we have introduced when whipping the cream.
Step 7
You can freeze the ice cream in an ice cream maker, but if you do not have this appliance, put the mixture in a container, take it to the freezer and stir the mixture every 30 minutes until it is completely frozen.
Step 8
When we are going to consume the ice cream it is convenient to take it out of the freezer about 5 – 10 minutes approximately before serving, so it will be creamier and easier to handle. It will be very attractive if we serve it with a little cinnamon sprinkled on top and some wafer or cookie.
