Lactose-free “Cheese”
Soy cheese : Soy cheese is sold in vegan and non-vegan varieties. Vegan varieties contain no ingredients casein, dried milk proteins.
The main ingredients in most soy cheeses are soy proteins and soybean oil. Soy cheese is sold in numerous flavors such as mozzarella, nacho, cheddar and parmesan. It can be bought grated or packaged in pieces and slices.
Rice cheese : Rice cheese is sold in vegan and non-vegan varieties. The vegan varieties do not contain the ingredients casein, dried milk proteins. Usually the main ingredients are rice flour and rice bran oil. Rice cheese is sold in flavors such as cheddar, pepper and American. It can be purchased grated or packaged in chunks and slices.
Almond cheese : this product is made by replacing animal milk with almond milk. Sometimes the almond cheese you buy contains dried milk protein casein , which means it is not suitable for vegans . The ingredients of almond cheese are crushed almonds and water, rapeseed oil and brown rice flour. Almond cheese often has a texture that is more similar to conventional cheese than soya or rice cheese.
It is available in flavours such as jalapeno, cedar and mozzarella.
While it doesn’t have the same creamy texture and light flavour as flavoured almond cheese, you can try making your own interlocking almond cheese .
Indian cheese: a new favourite, especially among vegans, cashew cheese is very versatile.
Many versions of cashew cheeses on sale in shops are spread consistently and offer a variety of flavours. Yeast from India is often added to cashew cheese to give it a ‘cheesy’ flavour. Cashew cheese is easy to make at home. Try it for vegan nacho cheese or cashew cheese flavoured for it.
Yoghurt cheese : this cheese contains dairy, but it is made with live yoghurt cultures acidophilus'e and bifidus'e, which remove the milk mixture when the cheese is made and aged. This makes it an option for people with possible lactose intolerance. Yoghurt cheese has a texture and taste most similar to normal cheese and also melts relatively well.
