Recipe for Classic Arroz con Pollo

Arroz con pollo, which means chicken rice, is similar to paella . It is a classic chicken and rice bar that is popular in many Latin American countries and parts of the US. It is a Spanish version with saffron with chopped pimientos and tomato sauce.
This version is made with chicken parts, but you can use boneless chicken thighs in the recipe.

. 1 roast chicken, cut (about 3 1/2 pounds chicken pieces) 4-6 strips celery (about 1 cup chopped) 1 green bell pepper 1 medium onion 1 garlic clove 1/4 cup vegetable oil 1 cup uncooked white long grain rice 1 can (8 ounces) tomato sauce 1 1/2 glasses water or low-sodium chicken broth 1/4 to 1/2 teaspoon crushed saffron Kosher salt and freshly ground black pepper to taste 1 (4-ounce) can crushed pimientos, dried<h2>How to make
Pat chicken pieces dry with a paper towel. Chop celery into 1/4-inch pieces. Cut bell pepper in half lengthwise and remove seeds. Peel the pepper with a 1/4-inch dice. Peel and chop the onion. Mince the garlic. Set the Vegetable Recipes aside. Place large, deep, heavy bottles over medium heat. Add vegetable oil. When the oil is hot and shiny, arrange the chicken pieces in the pan. Cook the chicken, turning, until browned on all sides, about 12 to 15 minutes. Remove chicken to a plate and set aside. Discard about 2 tablespoons of the oil from the pan; discard the remaining oil. Add celery, bell pepper and onion to the pot. Saute for about 3 minutes. Add the garlic and sauté for another minute. Add rice, tomato sauce, water, saffron, 1 teaspoon kosher salt and about 1/4 teaspoon freshly ground black pepper. Stir the mixture and add the chicken back to the bottle. Bring to a boil, reduce heat to low, cover pan and simmer for 20-30 minutes or until rice is tender. Clean the rice with a fork. Taste and adjust seasonings with more salt and pepper if needed. Stir in the pimiento and heat for another minute or two.
