Beet Relish recipe with horseradish and cabbage

What you’ll need
4 cups chopped raw beets 6 cups chopped cabbage 2 cups chopped onion 2 cups granulated sugar 2 tablespoons prepared horseradish 1 tablespoon salt 2 cups vinegar
How to make it
Combine all ingredients in a large pot. Bring to a boil, reduce heat and simmer for about 20 minutes or until thick, stirring occasionally. Place in hot sterilized jars and process in a boiling water bath for 20 minutes.
Put in 4-5 pints of sugar beets.
General rule for higher elevations, from Colorado State University Cooperative Extension:
Due to the higher boiling temperature of water at high elevations, increase processing time by 1 minute for every 1,000 feet above sea level if time is 20 minutes or less.
If the processing time is longer than 20 minutes, increase it by 2 minutes per 1000 feet.
