Cauliflower and vegetable salad

For this recipe we will work the cauliflower so that it looks like rice, and we will mix it with other good Vegetable Recipes, and eggs. This way we can guarantee a good supply of vitamins and proteins. This is the Cauliflower and Vegetable Salad.
Ingredients: 4 porions – 3 SP / serving 1 cauliflower, medium size 2 teaspoons sunflower oil 1 bell bell pepper, finely chopped 1 shallot, minced Chunk of ginger, finely chopped 2 tablespoons soy sauce 1 clove of garlic, minced and chopped 4 eggs 200 g peas 2 carrots diced Preparation: Cut the cauliflower and remove the hard inner core and leaves, then put the cauliflower in a blender until it looks like rice, then set aside.
Heat 1 teaspoon of oil in a large skillet over medium heat.Add the pepper, ginger, then cook, stirring, for 2 minutes, then add the cauliflower and cook for 5 minutes.
Meanwhile, in a small bowl, whisk the soy sauce and garlic.In another bowl lightly beat the eggs.Push the cauliflower mixture to one side of the pan, add the remaining spoonful of oil, then the eggs, cook for 2 minutes.
Add what’s left of the ingredients and cook for 5 minutes, then remove the pan from the heat. Finally serve your dish with lemon pieces.
