Here is the recipe for Light Chocolate Log, a delicious and pretty light chocolate rolled yule log that is very easy to prepare for a gourmet dessert after a good Christmas meal.
Ingredients for 10 people: – 7 points / person –
3 eggs 100 g flour 3 tablespoons sweetener 1 teaspoon vanilla extract
For the ganache:
200 g dark chocolate 150 g light cream 5% 3 tablespoons cottage cheese 0%
Preparation:
For the ganache:
Melt the chcolat in a double boiler or microwave, then in a saucepan heat the liquid cream.
Pour the hot liquid cream over the melted chocolate and mix well.
Then add the cottage cheese and mix well.
Let cool and then set aside in the refrigerator, stirring occasionally.
The ganache should have the consistency of a spread.
Preheat the oven to 180°C
In a bowl put the egg yolks, the sweetener and the vanilla extract then beat with an electric mixer for 2 minutes.
Add the flour and mix well.
Level the surface with your spatula then bake for 10 to 12 minutes at 180°C.
Turn out the baked sponge cake onto a clean, damp tea towel.
Immediately roll the cake in the tea towel then leave to cool for about ten minutes.
To assemble:
Unroll the cookie then spread half of the ganache.
Roll the cookie again and then cover it with the rest of the cream with the help of a spatula.
Then form ridges with a fork to make your log look as much like a real log as possible.
