Here’s the recipe for Light Coral Lentil Soup, a delicious lentil soup flavored with cumin and without sour cream, light, satiating and perfect for warming up bodies.
Ingredients for 4 people: – 2 points / person –
220 g coral lentils 400 g canned peeled tomatoes 3 shallots 3 teaspoons cumin powder 1 liter water 1 chicken stock cube 1 tablespoon olive oil salt, pepper
Preparation:
Peel then chop the shallots.
In a casserole heat the olive oil then fry the shallots.
Add the tomatoes, tomato juice, lentils, cumin, water and stock cube then cover and cook for 25 to 30 minutes.
Check the lentils for doneness then blend until smooth.
Adjust the seasoning then serve immediately.
