-1½ pounds of fatty beef stew meat
-1 large onion
-3 carrots
-3 celery stalks
-2 tablespoons of flour
-2 tablespoons of tomato paste
-6 cups of beef broth
-1 bay leaf
-1 teaspoon of dried thyme
-1 teaspoon of salt
-½ teaspoon of black pepper
Instructions:
1) Preheat oven to 375 degrees Fahrenheit.
2) In a large pot or Dutch oven, brown the beef in batches over medium-high heat.
3) Once all the beef has been browned, add the onion, carrots, and celery and cook until softened, about 5 minutes.
4) Stir in the flour and tomato paste and cook for 1 minute.
5) Pour in the beef broth and add the bay leaf, thyme, salt, and black pepper.
