6 eggs
1/2 cup milk
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons butter
2 cups potatoes, peeled and thinly sliced
2 onions, peeled and thinly sliced
To make the eggs, whisk together the eggs, milk, flour, baking powder, salt and pepper in a bowl. In a large frying pan over medium heat, melt the butter. Add the egg mixture to the pan and cook for about 10 minutes, until the eggs are firm and cooked through.
Meanwhile, in another large frying pan over medium heat, cook the potatoes and onions in oil until the potatoes are golden brown and the onions are softened.
