Chicken thigh recipe with sweet cherry peppers

This Chicken thigh recipe is a delicious and healthy meal that is perfect for any night of the week. Made with boneless, skinless chicken thighs, sweet cherry peppers, and a few other simple ingredients, this dish is easy to make and packed with flavor.
To begin, Preheat oven to 375 degrees F. Next, season the chicken thighs with salt, pepper, and any other spices you like. Then, in a large skillet over medium-high heat, cook the chicken thighs until browned on both sides. Once browned, remove the chicken from the skillet and set aside.
In the same skillet, add the cherry peppers and cook until they are soft. Oncesoftened, add in a spoonful of tomato paste and a splash of chicken broth. Stir until the tomato paste is evenly mixed in and cook for one minute. Then, add the chicken back into the skillet and spoon the cherry pepper sauce over top.
Place the skillet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through. Once finished, remove from oven and Serve immediately.
This chicken dish is perfect served over a bed of rice or quinoa. For an extra bit of flavor and texture, top with some chopped scallions or fresh parsley
