Für many a must in the pre-Christmas season: the regular & amp;ige walk to the Christmas market. Glühwein, roasted almonds or bratwurst. At the Christmas market, everyone finds their personal happiness, at least in culinary form. But you can also make popular classics from the Christmas market quite easily at home. In the following, we’ll show you how to make poffertjes, potato pancakes, Baumstriezel and Feuerzangenbowle in just a few steps. So you get the Christmas market simply in your own four walls.

1. Poffertjes

Dafür you need (für approx. 2 to 3 people):

3 eggs 80 g sugar 1 pückchen vanilla sugar 1 pinch of salt 130 g sifted flour 3 tsp baking powder 160 ml milk Butter lard Powdered sugar Nutella to serve

How it works:

1.1 Beat eggs with sugar, vanilla sugar and a pinch of salt until foamy. Mix flour and baking powder and stir the mixture into the rest in shakes. Add the milk and mix everything with a hand mixer. Let the dough swell for about 30 minutes.

1.2 Put in the pan 1/2 tsp clarified butter, let it melt and spread it evenly on the bottom of the pan. Fülle the batter into a dosing bottle (or you can use a löffel as shown in the video). Then inject the poffertjes with the dosing bottle into the pan (small circles about 4 cm in diameter). When the batter has risen a bit, turn the poffertjes with a fork. Fry them a little longer – after about 1 minute they are ready. Sprinkle the Poffertjes before serving still with powdered sugar.

2. Baumstriezel

For this you need:

100 ml milk 270 g wheat flour 3.5 g dry yeast 35 g sugar 1/2 tsp vanilla flavoring 1 pinch of salt 1 egg (size M) 50 g liquid butter 1 level tsp cinnamon 50 g sugar

How it works:

2.1 Put flour, eggs and vanilla flavoring in a bowl. Löse sugar and yeast in lukewarm milk and add the mixture to the rest in the bowl. Process everything with a hand mixer for about 5 minutes until a smooth dough. Cover the bowl with a damp cloth and let the dough rise for about 45 minutes.

2.2 Then knead the dough and roll it out to a size of about 20 x 50 cm. Then cut the dough lengthwise into 2 cm wide strips.

2.3 Roll a rolling pin in aluminum foil and brush it with liquid butter. Clamp the rolling pin preferably in an ovenproof baking dish with handles.

2.4 Wrap the dough strips around the rolling pin and brush the dough with liquid butter as well. Then sprinkle cinnamon and sugar on top. Put everything in the preheated oven and bake at 200 °C top and bottom heat for 10 minutes per side (so 20 minutes in total). Löse the Baumstriezel then from the rolling pin and serve this Christmas treat with jam or liquid chocolate.

3. Potato pancakes

For this you need (for 3-4 pieces):

500 g mainly waxy potatoes 1 onion 2 eggs 2 tablespoons blütenzarte oat flakes salt freshly grated nutmeg 4 tablespoons clarified butter

How it works:

3.1 Peel potatoes and onion and grate them with a grater in a bowl lined with a dish towel. Squeeze everything well so that the potato water can drain off.

3.2 Put the squeezed mass in a bowl and add oatmeal, eggs, grated nutmeg and salt and mix everything together.

3.3 Heat clarified butter in a frying pan and form the grated potatoes into flat patties. Fry them for about 5 minutes on each side, until golden brown. (Turn them as soon as the edges brown.) Pat the patties with kitchen paper after frying and serve with applesauce, cranberry compote, or savory Räucherlachs and horseradish.

4. Feuerzangenbowle

For this you need (for approx. 8 cups):

1/2 untreated orange in slices juice and abrasion of a lemon 1.5 l red wine 250 ml orange juice 1 stick of cinnamon 4 cloves 3 star anise 180 g sugar c. 200 ml rum (54 vol.%)

How it works:

4.1 Give red wine with orange slices, zest and juice of a lemon, orange juice, star anise and cloves in a pot. Bring everything to a boil and let it steep. Then pour the punch through a sieve into an ovenproof bowl.

4.2 Put a grater on the bowl and stack sugar cubes in the shape of a pyramid on it.

4.3 Put rum in a ladle and pour it over the pyramid of sugar cubes. Then light the sugar and let it burn until it has completely dissolved and dripped into the bowl.

We can’t say which of the four recipes delights us the most. All these treats smell and taste like Christmas and, above all, look as if they were bought at the local Christmas market. So real Christmas spirit comes up!
